Egg and avocado sandwich

Ingredients for two sandwiches:

– 2 slices of wholegrain bread
– 1 avocado
– 2 eggs
– handful of lettuce
– 2 spring onions
– mayonnaise
– salt and pepper

Preparation:

Boil the eggs for 7 minutes and then immerse them in cold water. Remove the shells and chop them into small pieces.

Scoop the avocado out of the skins and cut this into small chunks too.

Wash the lettuce and leave it to dry. Slice the spring onions finely.

Combine some mayonnaise, salt and pepper with the chopped egg. You can add any herbs you’d like to as well. Now stir in the avocado and spring onion.

Arrange some lettuce on each slice of bread. Then spread the egg and avocado mixture on top. Sprinkle with a little extra salt and pepper to taste. Add the second slice of bread and cut the sandwich in half.
