Bake a carrot cake

You will need:

  • 125 g butter
  • 200 g sugar
  • 3 eggs
  • 200 g self-raising flour
  • 2 tsp cinnamon
  • 75 g walnuts
  • 200 g grated carrots
  • 250 g mascarpone
  • 75 g icing sugar

 

Beat the butter and sugar until creamy. Then beat the eggs in one by one, followed by the carrot, nuts, cinnamon, and self-raising flour. Pour the mixture into a cake mould and bake for around 50 minutes until a nice golden brown. In the meantime, beat the icing sugar into the mascarpone. Allow the carrot cake to cool fully and top it with mascarpone.
