Carrotcake

Ingredients for 1 cake:

200 g self-raising flour
– 1 large carrot
– 200 g unsalted butter
– 175 g granulated sugar
– 2 eggs
– 100 g sultanas
– 50 g walnuts
– 1 tsp cinnamon
– pinch of salt

Preparation:

Preheat the oven to 180 °C. Grease the baking tin with butter.

Grate the carrot. Chop the walnut finely.

Melt the butter in a pan, then pour it out into a bowl. Mix the carrot, sugar, eggs and salt into this with a mixer or whisk. Sieve the self-raising flour over the same bowl and then beat in the cinnamon. Stir in the raisins
and walnuts.

Pour the mixture into the baking tin. Bake the carrot cake for 45 minutes. Test whether the cake is cooked through by inserting a skewer. If the skewer is clean when you remove it, the cake
is ready.

Allow the cake to cool for an hour.
