Couscous salad


– 250 g couscous
– 1 clove of garlic
– 1 red onion
– 3 tbsp olive oil
– 1 tbsp za’atar
– 100 g dried pitted dates
– 150 g tomatoes
– 6 g parsley
– 50 g unsalted almonds
– sea salt


Bring 400 ml of water to the boil. Slice the red onion very finely and crush the garlic. Add both ingredients to a pan along with the lemon juice, olive oil, za’atar and a pinch of sea salt. Put the couscous in a bowl, pour the boiling water on top, cover it and leave it for 5 or 6 minutes. Chop the parsley, almonds and dates into pieces and quarter the tomatoes.

Fluff the couscous with a fork and add the dressing along with two thirds of the chopped parsley. Pour the couscous into a container that you can bring with you, then sprinkle the tomatoes, dates, parsley and almonds over the top. Finish with a drizzle of olive oil.
