I make these eclairs every now and then. Just for a treat. They don’t look that neat, but they taste delicious.
- 2 eggs
- 50 g butter
- 100 ml water
- 75 g flour
- pinch of salt
- crème pâtissière
- pecan nuts
First make the dough for the eclairs. Add the butter and water to a pan and bring to the boil. Remove the pan from the heat once the butter
has melted. Add the our and salt and stir together to create a smooth mixture. Break the eggs over the pan and combine well. Pour the mixture into a piping bag and pipe lines of dough on to a baking sheet covered in baking paper. Bake the eclairs for 15 minutes at 200 ̊C.
Allow the eclairs to cool fully then ll them with crème pâtissière. Finally, pipe the icing over the eclairs and decorate with pecan nuts and pistachios. I chopped the nuts up first. That looks nice and makes them easier to eat.
