Grandma’s vegetable soup

Ingredients:

– 500 g chopped vegetables: cauliflower, broccoli, leek, celery, carrot
– 1/2 head of celery
– 1/2 bunch of parsley
– 1 tbsp chives
– 3 small onions
– 500 g minced beef
– mince seasoning
– 1 egg
– 3 l water
– 2 stock cubes
– 1 sachet of Maggi Seasoning
– vermicelli 
– olive oil 
– salt and pepper

Preparation:
Mix the beef with the mince seasoning and the egg and roll it into little balls. Chop the vegetables and herbs and bring them to the boil with the stock. Chop the onions finely and fry them in a little olive oil. Then add the salt, pepper, onions, Maggi seasoning and meatballs to the soup. Simmer the soup until the meatballs and vegetables are cooked through. I always cook the vermicelli separately and add it to the soup at the end.

Tip: If you have potatoes left over from the day before, cut them into cubes and add them to the soup at the last minute. It tastes delicious and it’s a great way to avoid food waste!
