Preheat the oven to 220 °C. Chop the pumpkin in slices and brush these with a little olive oil and plenty of agave syrup. Place the pieces on a baking sheet lined with baking paper. Add the peeled and chopped ginger. Put the baking sheet into the oven. Take the pumpkin out after 45 minutes and chop the slices up into small pieces. Add a large spoonful of Greek yoghurt to a glass. Sprinkle a layer of chia seeds over the yoghurt and then add a spoonful of mashed pumpkin on top. Then another layer of yoghurt, chia seeds and pumpkin. Finish with pumpkin and chia seeds.
