Pumpkin soup

  • 1 pumpkin
  • 2 onions
  • 1 litre of vegetable stock
  • 1 peeled carrot
  • 1 clove of garlic
  • 1/2 leek
  • 2 tsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1 tsp cumin
  • 100 ml single cream
  • Dash of oil
  • Pumpkin seed oil

Slice the pumpkin down the middle and remove the seeds. Remove the peel from the pumpkin and the carrot before cutting the flesh into chunks. Finely chop the garlic and onions. Cut the leek into small circles and rinse them under the tap. Heat a pan before adding a dash of oil, then gently fry off the onions and the garlic. Add the cayenne pepper, cumin, turmeric and curry powder. Stir this all together before adding the leek, pumpkin, carrot and stock. Bring this mixture to the boil and let it simmer for at least 30 minutes until the ingredients have softened. Blend the soup using a blender before adding the single cream. To finish, garnish with pumpkin seed oil and a dash of cream.
