Stuffed tomatoes



For 2 persons

– 2 tomatoes
– 1 cup of fresh spinach
– 1 lettuce
– 5 chive stalks
– 4 rashers of bacon
– 2 tbsp Greek yoghurt
– 1 clove of garlic
– 1 tsp fresh dill
– 1 tsp basil
– salt and pepper


Slice the top off the tomatoes and carefully scoop out the flesh. Mix the chopped spinach, lettuce, basil and bacon in a bowl. Combine the yoghurt, garlic, herbs and salt and pepper, then stir this mixture through the spinach, bacon and lettuce. Fill the tomatoes and serve them straight away. I used the tops of the tomatoes as decoration. Enjoy!
