Toasties

Goat’s cheese and beetroot toasties

– 6 slices of wholemeal bread
– 150 g soft goat’s cheese
– 150 g beetroot slices
– 25 g walnuts
– 3/4 tbsp peanut oil
– 1½ tbsp balsamic vinegar

Spread the goat’s cheese onto the slices of bread. Mix the beetroot with the balsamic vinegar and the pieces of walnut, then sprinkle everything over the cheese. Now place the sandwiches in a toastie maker and take them out once they’re golden brown.

Chocolate toasties

– 8 slices of white bread
– 250 g chocolate with pieces of hazelnut
– 40 g butter

Spread butter onto one side of each slice of bread. Break the chocolate up into large pieces and arrange these evenly inside the sandwiches. Place the sandwiches in the toastie maker for about five minutes.

Tuna toasties

– 6 thick slices of sourdough bread
– 1 large tin of tuna
– 6 slices of cheese
– 1½ red onions
– 1½ red peppers
– 6 slices of tomato
– sambal
– mayonnaise
– 1½ tsp capers

Combine the tuna with the mayonnaise and the sambal then spread the mixture on the bread. Divide the pieces of pepper, slices of onion and capers over the top. Finish with the cheese and the slices of tomato, then place in the toastie maker.

Goat’s cheese and spinach toasties

– 6 slices of your favourite bread
– goat’s cheese
– baby spinach
– pesto
– avocado

Arrange the spinach leaves on the sandwich. Add the crumbled goat’s cheese on top, along with the slices of avocado. Spread a little pesto over this and place the sandwich in the toastie maker for a couple of minutes.

Apple pie toasties

– 6 slices of cornbread
– 1½ tbsp butter
– 3 tsp sugar
– 1½ tsp cinnamon
– 1½ green apples

Spread butter on both sides of a slice of bread. Arrange thin slices of apple inside the sandwiches and sprinkle the sugar and cinnamon on top. Place the sandwiches in the toastie maker for a couple of minutes.
