• 6 sheets of puff pastry
• 500 g fresh spinach
• 85 g bacon
• 2 tbsp cheese with herbs
• olive oil
• 1 tbsp breadcrumbs
• 3 eggs
• salt and pepper
Preheat the oven to 180°C. Cover a baking tray in baking paper and lay sheets of puff pastry over the base and sides.
Fold the edges of the base over and prick holes in the dough with a fork. Sprinkle some breadcrumbs over the base.
Heat the oil in a pan. Fry the spinach in this until it has wilted.
Leave it to drain in a sieve, then divide it over the pizza base.
Break the eggs on top of the spinach. Make sure the yolks don’t break. Then sprinkle the bacon and the herb cheese over the dough.
Bake for 25 minutes in the oven.
