Plum tart

Ingredients to make four individual tarts:

• 300 g flour

• 4 eggs

• 200 g butter

• 200 g sugar

• 2 tbsp baking powder

• 300 g plums

• butter for greasing

Preparation:

Preheat the oven to 180 °C.

Wash the plums and remove the stones. Cut the plums into segments.

Beat the butter and sugar with a mixer. Add the flour and baking powder. Beat in the eggs and combine everything well.

Grease four small tart tins with butter and divide the mixture between them.

Arrange the slices of plum in a pretty pattern on top of the batter. Make sure the skin is facing up.

Bake the plum tarts in the oven for 40 minutes. Then reduce the temperature to 160 °C and continue to bake for a further half hour, until the tarts are golden brown.

Allow the tarts to cool. Sprinkle a little more sugar over the top before serving. They’re delicious with a good dollop of whipped cream too.
