Chocolate chip cookies

Chocolate chip koekjes


– 140 g butter
– 110 g granulated sugar
– 100 g golden caster sugar
– 1 tsp vanilla extract
– ½ tsp salt
– 1 egg
– 210 g flour
– ½ tsp baking soda
– 200 g dark chocolate chips


Add the butter, sugars, vanilla extract and salt to a bowl and mix together for a couple of minutes, until light and creamy. Beat in the egg. Add the flour and baking soda to the butter mixture and knead together. Finally, add in the chocolate chips and mix until they are distributed evenly. Shape the dough into a roll with a diameter of about 4 cm and wrap it in clingfilm. Leave the dough to rest in the fridge for at last at least an hour.

Preheat the oven to 175 °C and line a baking sheet with baking paper.

Cut the dough into slices around 1.5-2 cm thick and space these out on the baking sheet. Bake the cookies for 12-17 minutes until they are golden brown. Leave them to cool on a rack.
