Sometimes, you just feel like baking something that not only looks adorable but also tastes delicious. These sweet apricot heart cookies are exactly that: buttery, crisp cookies with a little fruity jam in the center. Perfect for a cozy tea moment, as a Valentine’s treat, or simply because you’re in the mood for something sweet. And don’t worry—they may look fancy, but they’re actually super easy to make. Just knead, cut out, and pop them in the oven. Sounds doable, right?
Ingredients:
- 200 g flour
- 75 g sugar
- 100 g unsalted butter, room temperature, cut into pieces
- 1 egg, lightly beaten
- Apricot jam
Other supplies:
- Rolling pin
- Heart-shaped cookie cutters in two sizes
How to make these sweet apricot heart cookies:
- In a bowl, mix the flour, sugar, egg, and butter, and knead it into a smooth dough ball. Wrap it in plastic wrap and let it rest in the fridge for about 30 minutes.
- Preheat the oven to 180°C (350°F). Roll out the dough and cut out heart shapes. From half of the cookies, cut out a smaller heart in the center.
- Bake the cookies for about 20 minutes until golden. Let them cool completely.
- Spread a small spoonful of apricot jam on a whole heart-shaped cookie, then place a cut-out heart cookie on top. Repeat with the rest. And that’s it—so easy!
These beautiful cookies also make a lovely gift—just wrap them in clear cellophane for a sweet Valentine’s surprise. Will you be making them too?
Love, Daphne
