Fruit tarts with custard pudding

Fruit tart

Ingredients:

– 180 g cold butter
– 150 g sugar
– 300 g flour
– 1 egg
– salt

Filling:

– 30 g custard powder
– 25 g sugar
– 500 ml milk

Topping:

– mixed berries
– strawberries

Combine all the ingredients for the pastry in a bowl using a mixer, until they form a crumbly dough. Then knead the mixture until it forms a round ball. Wrap this in some clingfilm and chill in the fridge for half an hour.

In the meantime, make the custard pudding. Combine the custard powder and the sugar in a bowl. Pour in a dash of milk and stir to form a paste. Heat the rest of the milk until almost boiling and add the paste to this. Stir this mixture with a whisk and allow to cool and thicken.

Preheat the oven to 180 C°. Roll the dough out and use it to line the tart cases. Prick a couple of holes in the base of each and bake the pastry cases for a quarter of an hour, until light brown. Leave these to cool. Spoon some custard pudding into the pastry cases and arrange the mixed berries and strawberries on top. Keep the tarts covered in the fridge.
