Ice-cream sandwiches

These black cherry ice cream sandwiches are Anne and Barney’s favorite summer treats. But Rob likes to have one, or two, or… They’re festive, deliciously refreshing, and way too good to stop at just one. In this blog, I’ll show you step by step how to make them yourself. Perfect for a hot summer day, a garden party, or just when you’re in the mood for something extra special.

Ingredients:
For the cookies (to make 12)
– 200 g unsalted butter (room temperature)
– 150 g caster sugar
– 1 egg
– 1 tsp vanilla extract
– 300 g flour
– pinch of salt
– 3 tbsp cheerful sprinkles (for the dough)
For the filling:
– 1 l black cherry ice cream or vanilla ice cream with cherries
– extra sprinkles for the edges

Cookies

Combine the butter, sugar, egg and vanilla until smooth and creamy. Add the flour, salt and sprinkles, then knead to form a dough.

Wait

Wrap the dough in film and place it in the fridge for 30 minutes.

Bake

Preheat the oven to 180 °C. Roll the dough, stamp out the cookies and bake them for 10-12 minutes until golden brown. Allow to cool fully.

Sandwich time!

Sandwich a scoop of black cherry ice cream between two cookies and roll the edges in sprinkles. Push the cookies together gently.

Store

Wrap the sandwiches in baking parchment and stack them in the freezer. Or get stuck in straight away!
