Once fall rolls around, I automatically start craving a big pot of soup. 🎃🥕 This pumpkin soup with carrots and sweet potatoes is deliciously smooth and creamy, with a hint of sweetness from the vegetables. Perfect for a cozy lunch or as a warming dinner served with a slice of fresh bread.

Ingredients:
– 1 small pumpkin
– 3 large carrots
– 2 sweet potatoes
– 1 onion
– 2 cloves of garlic
– 2 tsp curry powder
– 1 liter vegetable broth
– salt and pepper
– pumpkin seeds and sesame seeds
Peel the pumpkin and sweet potatoes and cut them into chunks. Peel the carrots and slice them. Peel the onion and chop it finely. Mince the garlic. Heat some oil in a pot and sauté the onion and garlic briefly. Add the curry powder. Add the vegetables and sweet potatoes. Pour in the broth and let it simmer gently. Puree the soup once the sweet potatoes and vegetables are tender. Serve with pumpkin seeds and sesame seeds.
Enjoy your meal!
Love, Daphne
