(for 8 ice creams)
– 200 g blueberries
– 1 banana
– 1 ½ tbsp water
– 40 g sugar
– 400 g yoghurt
– 2 tbsp honey
Bring the blueberries, water and sugar to the boil in a pan. Cook for five minutes, then remove from the heat. Allow the mixture to cool and then blend it.
Mash the banana and combine it with the yoghurt and honey. Stir this into the pureed blueberries. Fill the ice cream moulds with the yoghurt and fruit mixture. Insert the sticks and put the ice creams in the freezer for 4-6 hours.
Remove the ice creams from the freezer after about four hours. If it’s difficult to get the ice creams out of the moulds, you can run them under the cold tap for a minute to help loosen them.
