Pear muffins with almonds and cinnamon

Autumn is in the air: the days are getting shorter, and I want to make the kitchen a warm and cosy place to be. What could be better than the smell of delicious, freshly baked pear muffins? Soft, gently spiced and just the thing for an autumn day. Perfect with cinnamon, nuts or a drizzle of honey. They’re easy to make, and the kids love them too.

 

Ingredients:
(to make 12 muffins)
– 2 ripe pears
– 250 g flour
– 2 tsp baking powder
– 1⁄2 tsp baking soda
– 1⁄2 tsp salt
– 11⁄2 tsp cinnamon
– 100 g granulated sugar
– 2 eggs
– 125 ml sunflower oil
– 150 ml milk
– 1 tsp vanilla extract
– flaked almonds

 

Instructions:
Preheat the oven to 180 °C. Combine the dry ingredients, flour, baking powder, baking soda, cinnamon and sugar, in a large bowl.

Mix the wet ingredients in another bowl: eggs, oil, milk and vanilla extract. Add the wet ingredients to the dry ingredients and mix briefly until everything is just combined (don’t overmix).

Peel and dice the pears. Fold the pieces of pear carefully into the mixture. Divide the batter between 12 paper muffin cases and sprinkle with flaked almonds.

Bake for 20-25 minutes, or until a skewer comes out clean. Allow to cool in the muffin tin, then move to a cooling rack. Now your autumnal pear muffins are ready to eat!
